Zucchini Bread with Crumb Topping
- 3 eggs lightly beaten
- 1 cup oil or 1/2 cup applesauce and 1/2 cup oil
- 2 cups sugar
- 3 cups grated zucchini (if frozen, keep liquid and use in bread)
- 3 cups flour
- 3 tsp cinnamon
- 2 tsp vanilla
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1 tsp sale
- 1/2 cup chopped nuts (optional)
- For Crumb topping
- 1 cup flour
- 1/4 cup brown sugar
- 2 tsp cinnamon
- 2 tbsp butter softened

Cooking time 2mins
Preheat oven to 325 degrees
Grease and flour two loaf pans
Sift together lightly into bowl flour, salt cinnamon, baking soda, baking powder, and salt
In large Beat eggs until lightly foamy.
Add oil (or oil/applesauce), sugar and mix
Stir in zucchini (remember to use liquid) and vanilla
Add dry flour mixture to wet mixture, blend until just combined. Add nuts if using.
Pour into prepared pans. If using crumb topping add to top
Bake for 50-70 minutes or until done.
For Crumb Topping:
Mix all crumb ingredients together, until crumbly and grainy. Add before baking.
