Mixed Berry Cobbler

Ingredients
- Filling:
- 16 oz. package fresh strawberries, sliced
- 6 oz. package fresh blackberries
- 6 oz. package fresh raspberries
- 6 oz. package fresh blueberries
- 2 Tbsp lemon juice
- 1/2 cup + 4 Tbsp sugar, divided
- 3 Tbsp cornstarch
- Topping:
- 1 1/2 cups flour
- 1 1/2 tsp baking powder
- 1 cup brown sugar
- 6 Tbsp chilled butter
- 1 tsp cinnamon
- 1/4 tsp salt
- 3/4 cup heavy cream
Preparation
Step 1
Preheat the oven to 350 degrees Fahrenheit. In a bowl, gently toss the berries with lemon juice. In a separate small bowl, mix together the 1/2 cup of sugar and cornstarch. Pour the dry mix over the berries and stir gently. Place the berries into the bottom of a 9" x 9" glass baking dish. In a medium bowl, mix together the flour, baking powder, cinnamon, salt, and brown sugar; Cut the chilled butter into the flour mixture with a pastry blender until it resembles coarse crumbles. Stir in the heavy cream to make a soft dough. Drop by spoonfuls over the fruit. Sprinkle with the remaining 4 Tbsp of sugar over the top. Bake the cobbler for 50 minutes or until the top is well-browned and the juices are bubbly. Serve warm with whipped cream or vanilla ice cream.
