Pizza Quesadilla

Ingredients
- 8 tortillas
- olive oil cooking spray
- 8 oz shredded mozzerella
- 1 pkg sliced pepperoni
- 3/4 to 1 cup pizza sauce
- any additions u might like, onions, peppers, olives, mushrooms.....

Preparation
Step 1
Heat a medium skillet over medium heat, or preheat an electric griddle.
Spray one side of each tortilla with a mist of olive oil. Arrange half of the tortillas, sprayed side down on the skillet or griddle. Spread ~3 tablespoons pizza sauce on each tortilla and top with cheese, pepperoni, and any additions. Top with the remaining tortillas, sprayed side up.
Cook quesadillas for 3-4 minutes on each side, or until golden brown. Remove from heat and allow to set for 1-2 minutes before cutting into pieces.
