Kale with labneh

Ingredients

  • 2 t toasted pine nuts
  • 2 md shallots thinly sliced
  • 1/2 c vegetable oil
  • salt
  • 3 t olive oil, plus more for serving
  • 2 garlic cloves finely chopped
  • 1 lb kale , torn
  • 1 tsp lemon zest
  • 2 tsp lemon juice
  • ground pepper
  • 1/2 c plain greek yogurt..strained

Preparation

Step 1

1) combine shallots and vegetable oil in small saucepan. cook over md high het stirring occasionally til golden..about 8 minutes. using slotted spoon, put shallots on a paper towel lined plate and season with salt

2) heat 3t evoo in large skillet and add garlic. cook til fragrant, about 30 seconds. add greens in batches, tossing to wilt slightly before adding more, about 2 minutes. add lemon juice, salt and pepper.

3) mix yogurt with the lemon zest, toasted pine nuts and evoo. top greens with shallots and yogurt mix
