Amalfi-Style Shrimp

Ingredients

  • 1 lb large shrimp, cleaned
  • 2-3 medium cloves garlic, minced
  • 12-16 mint leaves, finely chopped
  • Kosher salt to taste
  • Freshly ground pepper to taste
  • 1-2 Tbsp olive oil
  • 1 oz Parmesan cheese (1/2 cup)
  • 3/4 cup plain panko
  • 2 lemons

Step 1

Clean shrimp. Pat dry with paper towels and place in a plastic bag. Add garlic, mint and olive oil. Season with salt and pepper. Seal bag and spread marinade over shrimp. Refrigerate for 10 minutes.

Preheat broiler. Mix cheese and panko. Shake marinade off shrimp and coat with panko mixture. Thread onto skewers. Place on rimmed baking sheet. Broil 2 minutes on each side until golden and shrimp is pink. Serve with lemon wedges.
