Baked Pasta with Spinach and Spicy Sausage

Ingredients

  • 1 lb hot Italian sausage (casing off)
  • 1 onion finely chopped
  • 3 garlic cloves minced
  • 2 jars of favorite marinara sauce (26 oz each)
  • 6 Tbsp of favorite basil pesto
  • 1 lb penne pasta
  • 1 1/2 lbs mozzarella cheese (ball) - dice into chunks
  • 1 c freshly grated parmesan cheese
  • 1 6 oz bag of leaf spinach

Preparation

Step 1

Cook sausage in pan (5 min or until cooked), add onion and saute another 5 min. Add garlic and cook another min. Add marinara and simmer over medium heat 10 min until thickened. Add pesto to the mix and combine. Boil pasta meanwhile and drain.

Preheat oven 375 degrees, oil 13x9 baking dish (or 8x8?) and spoon thick layer of sauce on bottom of pan. In a large bowl combine pasta with remaining sauce, mozzarella cheese, 1/3 c parm cheese, and spinach leaves. Mix well to combine and put into pan. Sprinkle remaining parm on top and bake 30 min.
