Ingredients

  • 2 T olive oil
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 4 cooked chicken breasts, chopped
  • 2-3 quarts chicken broth
  • 2 oz cans chopped green chili peppers
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1.5 tsp cayenne red pepper
  • 5 cans Great Northern Beans, undrained
  • Topping: shredded monterey jack cheese and sour cream, as desired

Preparation

Step 1

1.Heat oil in large stock pot over medium heat. Saute onions for 10 minutes, or until tender.
2. Add minced garlic to sauteed onions and cook a minute or so.
3. Add chicken, chicken broth, green chilis, cumin, oregano and cayenne pepper and bring to a boil.
4. Reduce heat to low and add the beans. Simmer lightly for 20-30 minutes.
