Ingredients

  • 2

    T olive oil

  • 2

    onions, chopped

  • 4

    cloves garlic, minced

  • 4

    cooked chicken breasts, chopped

  • 2-3

    quarts chicken broth

  • 2 oz cans chopped green chili peppers

  • 2

    tsp ground cumin

  • 2

    tsp dried oregano

  • 1.5

    tsp cayenne red pepper

  • 5

    cans Great Northern Beans, undrained

  • Topping: shredded monterey jack cheese and sour cream, as desired

Directions

1.Heat oil in large stock pot over medium heat. Saute onions for 10 minutes, or until tender. 2. Add minced garlic to sauteed onions and cook a minute or so. 3. Add chicken, chicken broth, green chilis, cumin, oregano and cayenne pepper and bring to a boil. 4. Reduce heat to low and add the beans. Simmer lightly for 20-30 minutes.
