  • 2.5 lbs red potatoes
  • 1/4 lb bacon cut into pieces
  • 1/2 medium onion finely chopped
  • 1/2 cup cider vinegar
  • 1/4 cup water
  • 1 tablespoon plus 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon brown mustard seeds
  • 1 teaspoon mustard
  • 2 tablespoons finely chopped fresh parsley
  • 1 teaspoon paprika

Step 1

1. place potatoes in a large saucepan and enough water to cover. bring to a boil over high heat. reduce heat and simmer, uncovered ,20 to 30 minutes until potatoes are fork tender. drain and let cool.
2. cook bacon in skillet over medium heat. crumble in a small bowl and set aside.
3. cook and stir onion in 3 tablespoons of bacon drippings until tender. peel potatoes and cut into 1/4" slices.
4. combine vinegar, water, sugar, salt, mustard, and mustard seeds in large bowl. add potatoes and bacon to vinegar mixture. toss to coat evenly. top with parsley and sprinkle with paprika. serve hot or cold.
