Ingredients
- 1 Tbs. olive oil
- 1 &1/2 lbs. pork tenderloin, cut in 3/4 in. cubes
- 1 c. chopped onion
- 2 cloves garlic, minced
- 2 Poblano peppers, seeded & cut in 1/2 in. pieces
- 1 Jalapeno pepper, seeded & chopped
- 2 c. beef broth
- 1 c. chunky salsa
- 1-2 16 oz. can black beans, rinsed & drained
- 1 pkg. chili or taco seasoning mix
- Sour cream (optional)
- Fresh cilantro, chopped
Preparation
Step 1
Heat olive oil in skillet. Add pork, onion & garlic; cook over medium-high heat 6-8 min. or until pork is browned. Place mixture in crock pot; add next 5 ingredients. cover & cook on low 8-10 hrs. or on high 5-6 hrs. Serve with sour cream & cilantro, if desired.
