Chicken Cilantro

Ingredients
- 4 skinless, boneless chicken breast halves
- 2 medium green bell peppers, cut into strips
- 1 large red onion, cut into 1/4 inch wedges
- 2 tablespoons pickled jalapeno pepper strips or 1/2 fresh jalapeno pepper, seeded and cut into thin strips
- 2 tablespoons fresh lime juice
- 2 tablespoons red-wine vinegar
- 1 tablespoon olive oil
- 2 medium tomatoes, cut into 8 wedges each
- 2 tablespoons chopped fresh cilantro

Step 1
in a shallow glass dish, combine chicken, pepper strips, onion, and jalapeno pepper. In a small bowl, combine lime juice, vinegar, and oil; mix well. Pour over chicken mixture; stir to coat. Cover dish with plastic wrap; refrigerate for 30 minutes. Preheat the broiler. Remove chicken and vegetables from marinade; place on a broiler pan. Discard marinade. Broil 3 inches from heat for 5 minutes. Using tongs, turn chicken and vegetables. Add tomatoes to pan. Broil until chicken is no longer pink in center and vegetables are slightly charred, about 5 minutes. Arrange vegetables on serving plates; top with chicken. Sprinkle with cilantro and serve.
