luscious lemon bars

Ingredients

• Crust
• 1 cup flour
• 1/2 t. salt
• 1/2 cup conf sugar
• 1 swtick butter, melted but not hot
• filling
• 2 large eggs
• 3/4 cup sugar
• 1 1/2 T flour
• 76 T. jucie from 2 lemons
• 2 t. finely grated lemon zest

Preparation

Step 1

325*... spray 8x8 baking pan. fit and 8x16 inch foil across pan bottom and up sides to overhang.. spray foil with pam.
mix flour, salt, conf sugar in med bowl. stir in butter to form dough.Press dough into pan bottom. bake until pale golden and, about 20 min.
whisk eggs, sugar,flour, lemon juice and zest in med bowl.
remove pan from oven, pour lemon mix over and continue to bake until just set. about 20 min. let cool in pan for few min. then using foil, lift out and continue cooling on wire rack.
