Chicken Tostados and Avocado Dressing

Ingredients
- 2 T sour cream
- 2 T chicken broth
- 2 T fresh lemon juice
- 2 t canola oil
- 1/4 t ground red pepper
- 1/8 t salt
- 1/2 ripe avocado
- 1 1/2 T canola oil, divided
- 4 (6") flour tortillas
- 2 garlic cloves, minced
- 1 jalapeno pepper, minced
- 2 c shredded chicken breast
- 1 c shredded iceberg lettuce
- 1/2 c chopped tomato
- 1/4 c crumbled queso fresco (or shredded monterey)

Preparation
Step 1
1. Combine 1st 7 ingredients in a food processor, and process until smooth
2. Heat a skillet over med hi heat. Add 3/4 t oil to pan. Cook 1 tortilla 2 min on each side. repeat
3. Add remaining oil to pan. Add garlic and jalapeno; saute 1 1/2 min. Add chicken; cook 2 min. Place 1 tortilla on each of 4 plates; top with 1/2 c chicken mixture, 1/4 c lettuce, 2 T tomato, and 1 T cheese. top each with 3 T dressing.
