Ingredients
- 2 c. all-purpose flour
- 1 c. whole wheat flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1 &1/3 c. brown sugar
- 1 &1/4 c. applesauce
- 1/2 c. canola oil
- 2 c. rhubarb, cut into 1/4 in. pieces
- Cinnamon & brown sugar for topping (optional)
Preparation
Step 1
Preheat oven to 400 degrees. Combine 1st six ingredients & make well in center. Beat eggs. Stir in brown sugar, applesauce & oil. Pour egg mixture into well in flour mixture. Stir until batter is combined but still slightly lumpy.Fold in rhubarb.
Grease muffin tin, spoon about 2 Tbs. batter into each cup. Sprinkle with cinnamon & brown sugar, if desired.
Bake 15 min., or until muffins spring back when touched.
