Shrimp Creole

Ingredients

  • 1/4 cup butter or margarine
  • 2 Tbs instant minced onion
  • 1 cup chopped celery
  • 1/2 cup chopped green pepper
  • 2 Tbs flour
  • 1 Tbs season-all
  • 1 bay leaf
  • 1/2 tsp cayenne or red pepper
  • 2 tsp parsley flakes
  • 3 1/2 cups tomatoes
  • 1/2 cup water
  • 1 # cooked, cleaned shrimp

Preparation

Step 1

Melt butter in large skillet. Saute onion, celery, and green pepper until onion is slightly browned. Blend in flour. Add remaining ingredients except shrimp; mix well. Cover and simmer 30 minutes. Stir in shrimp and continue simmering just until shrimp is heated through.

Serve over rice.
