Potato, Herb Roasted New Potatoes

Ingredients

  • 1 pound 14 ounces small red potatoes, unpeeled
  • 1/4 cup chopped fresh basil or 1 tsp. dried
  • 1 T chopped fresh oregano or 1 tsp. dried
  • 1 T olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 2 1/4 ounces grated parmesan cheese

Step 1

1. Preheat the oven to 425 degrees. Cut the potatoes into 6 to 8 wedges a piece.

2. In a large bowl, combine the basil, oregano, oil, salt, and pepper. Add the potatoes and toss to combine.

3. Place the potatoes on a nonstick baking sheet and sprinkle evenly with the parmesan.

4. Bake the potatoes for 20 to 25 minutes, or until tender and golden brown.
