Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup sliced celery
  • 1/2 cup sliced fresh carrots
  • 1/2 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 2 cups water
  • 1 can (15-1/2 ounces) great northern beans, rinsed and drained
  • 3/4 cup chicken broth
  • 3/4 cup Italian stewed tomatoes
  • 1/2 cup frozen cut green beans
  • 1 bay leaf
  • 1/2 teaspoon salt 1/4 teaspoon pepper

Preparation

Step 1

In a large saucepan, saute onion, celery, carrot and garlic in oil until tender. Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through. Discard bay leaf.
