  • 1 Mango
  • 1/2 carton grape tomatoes
  • Rice Wine Vinegar
  • Olive Oil
  • 2 Limes
  • Cilantro
  • Avocado

Step 1

Peel your ripe mango and cube it up. Place it in a bowl with quartered up grape tomatoes (about half the carton). Toss in some cilantro.

Dressing is: Equal portions of rice wine vinegar with olive oil. I generally do 2 tablespoons of each. Add the juice of 2 lime wedges, extra cilantro. garlic salt and pepper, and 2 crushed cloves of garlic. Toss into the mango/tomato mix. Do not add the avocado until close to serving it (or else it browns up). Close to serving time, cube up your avocado and add to the tomato/mango mix.

If you want to put it over chicken.... cut your chicken lengthwise to make them thinner cutlets. Marinate in a separate batch of dressing (above) for an hour or so before grilling them. It is also good with the yummy lime chips.
