Chicken And Rice Casserole

Chicken:
I buy to chicken breasts with skin and bone(Perdue). Brush olive oil on skin lightly, salt and pepper breasts liberally/ place breasts on aluminum foil lined pan. Bake 350 degrees f for about 1 hour. when cool to touch, tear or cut into chunks.

Ingredients
- 2 (14 ounce) can cut green beans, rinsed and drained
- 3 cups diced cooked chicken ( I buy perdue chicken breast with skin and bone, bake in oven at 350 degrees f for one hour or so. brush cicken with olive oil, sprinkle with salt and pepper)
- 1 medium onion diced andsauteed ( I use about 1/4 of a cup, Dan doesn't like onions)
- 1 (8 ounce) can water chesnuts, drained and chopped
- 1 (4 ounce) jar of pimentos
- 1 (10 1/4 once) can condensed cream of celery soup (campbells)
- 1 cup mayonnaise (helman's)
- (6 ounce) box long grain and wild rice, cooked according to package directions ( I use Uncle Ben's Country Inn Chicken and Wild Rice)
- 1 cup of grated sharp cheddar cheese (I used packaged)
Preparation
Step 1
Preheat oven to 350 degrees f
Mix all ingredients together and pour into a greased # quart casserole dish. Bake for 20-25 minutes or until bubbly.
