Ingredients

  • 1/2 lb. Chicken cut in strips
  • 1 small onion, cut into thin wedges
  • 1 clove garlic
  • 1 c. fat free ricotta cheese
  • 1/2 c. sour cream
  • 2 oz. Chopped green chile peppers
  • 1 tsp. Cumin
  • 1/8 tsp salt
  • 1/2 c. salsa
  • 4 tortillas cut in half
  • 1 c. monterey Jack cheese

Preparation

Step 1

Spray fry pan-cook chicken 5 min. Remove
Add onion and garlic to same pan. Cover and cook 7 min. Add to chicken
Combine ricotta, sour cream, chiles, cumin and salt
Spread 1/2 c. salsa on bottom of 8x8 dish.
Arrange half of tortillas over salsa
Spread with half of ricota and half of chicken
Top with th c. jack cheese and 12 c. salsa.
Repeat. Sprinkle with Yz c. salsa and Yz c. cheese.
Cover loosely with foil and bake for 30 min at 350.
