Starbuck's outrageous oatmeal cookie

Ingredients

  • 1 1/2 C oats
  • 1/2 C flour
  • 1/4 C dark raisins
  • 1/4 C golden raisins
  • 1/4 C dried cranberries
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 6 Tbsp butter at room temperature
  • 1/2 C packed dark brown sugar
  • 1/4 C sugar
  • 2 ener g eggs
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • Topping
  • 4 Tbsp each dark & golden raisins

Preparation

Step 1

Preheat oven 350 degrees
Blend together oats, flour, raisins, cranberries, baking powder, baking soda and salt. Set aside. Beat butter and sugars till light and fluffy. Add eggs, cinnamon and vanilla, beat till combined. Gradually add oat mixture, beat until combined. Combine raisins for topping in separate bowl and set aside. Drop dough by rounded teaspoonfuls 2 inches apart onto 2 baking sheets. Place 1 rounded tsp of raisin on top of dough.
Bake 12-16 mins until cookies are golden brown but still soft. Cool 5 mins on baking sheet then transfer to wire rack to cool completely.
