Ingredients

  • 2 cups (9 oz) coarsely chopped cooked chicken (or one 10oz can chunk chicken drained and flaked)
  • 1/2 cup diced red bell pepper
  • 1 lemon
  • 3 Tbsp chopped fresh parsley, divided
  • 2 garlic cloves, pressed
  • 1 cup (4oz) mozzarella cheese
  • 1/2 cup mayonnaise
  • 1 tsp Italian seasoning mix
  • 1/2 cup (2 oz) grated fresh parmesan cheese, divided
  • 2 packages (8 oz each) refrigerated crescent rolls

Step 1

1. Preheat oven to 375F. For filling, coarsely chop chicken. Dice bell pepper. Zest lemon to measure 1 teaspoon zest. Cut lemon into thin slices using utility knife; cut slices in half. Chop parsley. Set aside.

2. In medium bowl, combine chicken, bell pepper, lemon zest, 2 tablespoons of the parsley, garlic, mozzarella cheese, mayonnaise, and seasoning mix; mix well.

3. Reserve 2 tablespoons of the parmesan cheese. Add remaining cheese to chicken mixture; mix well. Unroll crescent dough; separate into triangles. Arrange triangles in a circle on a large round pizza stone with wide ends overlapping in center and points toward outside. (There should be a 5-inch diameter opening in center).

4. Spoon chicken mixture evenly onto widest end of each triangle. Bring points of triangles up over filling and tuck under wide ends of dough at center of ring. (Filling will not be completely covered). Sprinkle remaining parmesan cheese over ring. Bake 28-30 minutes or until golden brown. Garnish with remaining chopped parsley and lemon slices.
