Cream Puffs (Grammy's)

This recipe only makes 6. Adjust accordingly.

Ingredients

  • 1/2 cup boiling water
  • 1/4 cup butter
  • 1/2 cup sifted flour
  • 2 eggs
  • Cream Puff Filling: MAKE SINGLE BATCH ONLY!
  • 2/3 cup sugar
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 2 egg yolks
  • 1 teaspoon vanilla

Preparation

Step 1

To make puffs: Add butter and shortening to water in a medium saucepan. Bring to a boil and stir in flour thoroughly. Remove from heat, cool slightly. Add eggs, all at once. Drop by tablespoons onto cookie sheet. You can double this--it only makes 6 puffs.
Bake 30 minutes at 350 degrees.

Custard filling:
Mix the sugar, flour and salt in the top of a double boiler; add 2 cups scalded milk; cook 15 minutes.

Meanwhile, slightly beat 2 egg yolks. ADD THE CUSTARD TO THE EGGS, then return all to the double boiler. Stir til thick. When cool, add the teaspoon of vanilla.

This will fill 12 cream puffs, but DO NOT double! If you need more, make another batch.
