French Onion Casserole

Given to me by Adam Shull. Cooked when we had the hunting cabin.

Ingredients
- 3 medium sweet onions
- 6 1/2 " slices French bread
- 2 tbsp butter
- 1 (8oz) pkg fresh mushrooms, sliced
- 2 cups (8oz) shredded Swiss cheese
- 1 can condensed Cream of Mushroom Soup
- 1 (5oz) can evaporated milk
- 2 tsp Soy sauce
- 1/4 cup finely chopped parsley

Preparation
Step 1
Slice onions crosswise then cut each the slices in 1/2.
Melt butter in large skillet, cook onions and mushrooms, stirring constantly until tender.
Spoon into lightly greased 2 qt. baking dish, sprinkle with 1 cup of cheese.
Combine soup, milk and soy sauce. Pour over the cheese. Top with bread slices and sprinkle with remaining cheese and parsley.
Cover and refrigerate 4-8 hours. Remove dish from refrigerator and stand at room temperature 30 minutes.
Bake covered at 375 for 30 minutes. Uncover and bake 15-20 minutes or until thoroughly heated. Let stand for 5 minutes before serving.
