PIEROGI Z KASZY ZE SEREM Buckwheat Dumplings
- 2 cups buckwheat flour
- 3 cups boiling water
- 3 cups all-purpose flour Salt to taste
- Piece of salt pork or bacon, diced, for topping (or butter)
- 1 cup dry cottage cheese or pot cheese
Combine buckwheat flour and boiling water, and mix thoroughly. Add all-purpose flour, season and mix again. Shape dumplings according to recipe for Lazy Dumplings. Drop into salted boiling water and cook, covered, until done, about 20 minutes. In the meantime, render the salt pork. Put cheese through a sieve or simply work with a fork so it is fluffy. Drain the dumplings, turn out onto a hot platter, mix with rendered fat and pork, and sprinkle with the cheese. Heat over boiling water for a few minutes before serving. Makes about 8 servings.
