Good to use for making ice cream sandwiches

Ingredients

  • 1 cup butter
  • 1 1/2 cup sugar
  • 2 large eggs
  • 2 3/4 cups flour
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 3 T. sugar
  • 3 tsp. cinnamon

Preparation

Step 1

Preheat oven to 350. (I use convection oven)
Mix butter, 1 1/2 c. sugar and eggs thoroughly in beater.
In separate bowl combine flour, cream of tartar, baking soda and salt.
Blend dry ingredients into butter mixture.
Chill dough, and chill ungreased cookie sheets for about 10-15 minutes.
Meanwhile, mix 3 T. sugar, and 3 tsp. cinnamon in a small bowl.
Scoop 1 inch globs of dough into the sugar/cinnamon mixture and coat by gently rolling the balls of dough
Place on chilled ungreased cookie sheet and bake 10 minutes.
I make the cookies a little bigger if I'm using them for ice cream sandwiches.


Makes 2-3 dozen depending on size
