  • 12 Chicken Breast Halves -- Skinned And Boned
  • 1/4 cup - Flour
  • 1/4 cup - Butter -- Clarified
  • 12 slice - Prosciutto
  • 12 slice - Monterey Jack Cheese
  • 1/2 cup - Onions -- Chopped
  • 1/4 teaspoon - Salt
  • 1/2 teaspoon - Pepper
  • 3 large - Garlic Cloves -- Minced
  • 1/2 pound - Mushrooms
  • 1/2 cup - Dry White Wine
  • 1 cup - Chicken Broth
  • 1 teaspoon - Thyme
  • 1/2 cup - Dry Sherry
  • 1/2 cup - Cream

Preparation

Step 1

Directions
1 Dip chicken in flour; brown in butter.
2 Arrange in a buttered 13x9 inches baking pan.
3 Top each breast with 1 slice Prosciutto and 1 slice cheese.
4 Cook onions and garlic until soft; add mushrooms, wine, broth and herbs.
5 Bring to a boil and cook 10 minutes.
6 Stir into hot mixture 1 tablespoon flour and a small amount of sherry.
7 Stir in remaining sherry and cream.
8 Season with salt and pepper.
9 Pour sauce over chicken.
10 Bake in a 375°F oven for 30 minutes.
