Chocolate Frosting

Ingredients

  • 1 2/3 cup confectioner's sugar
  • 3/4 cup heavy cream
  • 4 squares ( 4oz) unsweetened chocolate- chopped fine
  • 2 tea. vanilla extract
  • 6 tlbs. unsalted butter, at room temperature

Preparation

Step 1

BRING sugar and cream to full boil in sauce pot
ADD chocolate and stir until smooth
ADD vanilla
PLACE pot into a bowl of ice water and stir until its thick like mayo
BEAT butter, separately, until creamy and add to chocolate mixture and combine
IF lumpy, let stand 15 minutes
IF soupy, put in fridge 15 minutes
