Taco Casserole

Ingredients

• 1 lb ground meat or turkey
• 1/2 c chopped onion
• 1 8oz can tomato sauce
• 3/4 c water
• 1 envelope taco seasoning mix
• 2 eggs
• 16 oz red kidney beans
• 1/5 c shredded cheese
• 10 taco shells coarsely crushed
• 1 c shredded lettuce
• 1 tomato, chopped
• 1/4 c sliced pitted black olives

Preparation

Step 1

cook ground meat and onion until brown
add tomato sauce, water, and seasoning mix, and heat through.
remove from heat

beat eggs, stir in milk. add small amount of sauce mix to egg mix, stirring constantly.

return all to pan, stir in beans, cheese and crushed shells.

bake for 30 minutes at 350 in 13 x 9 pan
top with lettuce, tomatos and olives
