Slow Cooker Cider Pork Roast

Ingredients

  • 1 large onion, roughly chopped
  • 1 apple, peeled and roughly chopped
  • 3 gloves garlic
  • 2 cups apple cider
  • 1 1/2 cups water
  • salt and pepper to taste
  • 1/2 teaspoon ground ginger
  • 1/4 cup flour
  • 1 (3 pound) pork loin roast
  • 2 teaspoons vege oil
  • 1 stalk celery, roughly chopped
  • 4 large carrots, roughly chopped

Step 1

1. Combine 1/4 of the onion, 1/2 of the apple and the garlic in the bowl of a food processor. Process until smooth. Put in slow cooker along with water and apple cider.

2. Combine salt, pepper, ginger and flour in a shallow container. Gently press roast into the flour mixture to coat all sides. Brush off excess flour. Heat oil in large skillet. Brown pork in hot oil, turning until golden brown on all sides. Place roast in slow cooker, topping with celery, remaining onion and remaining apple. Cook low for 4 hours. Add carrots and cook low for 3 more hours.

3. Remove roast to platter, arrange carrots around roast and serve with strained juices.
