  • 2 boneless skinless chicken breasts, cubed 1/4c. Balsamic vinegar
  • 1/4 tsp. salt 3 Tbs. brown sugar
  • 1/4 tsp black pepper 6 broccoli florets, cooked until tender
  • 2 Tbs. flour 3 ciabatta rolls or other buns
  • 1 1/2 Tbs olive oil 3 large slices of tomato
  • 1 clove garlic minced 1/2 c. grated mozzarella
  • 1/2 c. low fat chicken broth

Sprinkle chicken with salt and pepper. Spread flour on a sheet of waxed paper. Toss chicken chunks in flour to coat completely.
Preheat oven to 350.
Warm oil in large skillet. Add chicken and garlic. Lower heat to medium and continue to cook until chicken begins to brown and garlic becomes fragrant, 8-10 min.
Add chicken broth, vinegar, and brown sugar. Bring to a boil. Cover and simmer 10-15 min.
Meanwhile, make cooked broccoli into a puree by processing in food processor for 2 min. Add a small amount of water if necessary to make a smooth consistency. You will need 1/3 c. puree.
Add puree to chicken and cook 2-3 min. more.
Place rolls on baking sheet. Top each of the bottom halves with a tomato slice, divide chicken among them and sprinkle with mozzarella.
Bake until cheese is melted and edges of rolls are crisp, 5-7 min.
