Rhubarb Muffins

Ingredients

• 11/2 c br sugar
• 2/3 c veg oil
• 2 eggs
• 1 c buttermilk
• 2 tsp vanilla
• 3 c flour
• 1 tsp bkg soda
• 1 tsp salt
• 1 cup chopped nuts(optional)
• 1 c finely chopped rhubarb

Preparation

Step 1

Cmbine br sugar, vanilla, eggs and buttermilk. Stir in the flour, soda,salt,nuts and rhubarb. Spoon into gressed muffin tins and sprinkle with topping: 1/2 c br sugar
1 tsp cinnamon
1/2 c chopped nuts
Bake 350 for 20-35 min.
