Nothing better than hot, buttered home made biscuits. This recipe was passed down from Ruby...the best cook in South Texas.
- 2 cups flour
- 4 teaspoons baking powder
- 1 tablespoon sugar, (2 for shortcake)
- 1/2 teaspoon salt
- 1/3 cup + 2 tablespoons of shortening cut until the size of peas.
- 1 cup milk
Sift 2 cups of flour and 4 teaspoons of baking powder into a bowl. Add 1 tablespoon of sugar ( 2 for shortcake) and 1/2 teaspoon of salt. Add 1/3 cup +2 tablespoons of shortening. Mix with a fork until the size of peas. Slowly add 1 cup of milk to the dry mixture and stir with fork until it comes together into a ball. Put dough on the flour board and fold several times then use a glass or a round cookie cutter to cut out biscuits. Place on a cookie sheet and bake at 450° for 10 minutes and then turn oven down to 400° until ready. Yum. Have butter and your favorite jam ready.
