Mississippi Caviar

Ingredients

  • 1 15 oz. can black beans (drained)
  • 1 15 oz. can corn (drained)
  • 1 15 oz. can black-eye peas (drained)
  • 2 tomatoes (diced)
  • 1 medium onion (diced)
  • 1 medium green pepper (diced)
  • 3 T minced garlic
  • 1/2 c. chopped cilantro
  • 1 jalapeno pepper (chopped)
  • juice of 1 lime
  • 1 package of dry Italian dressing mix
  • 1/2 c. oil
  • 1/2 c. vinegar

Preparation

Step 1

Combine first 10 ingredients in large bowl. Stir well. Combine oil, dressing mix and vinegar. Pour over mixture and stir well. Chill at least 2 hours. Serve with tortilla chips.
