Mocha Rum Cheesecake

Ingredients

  • Filling:
  • 1/4 c. rum
  • 1 tbsp. instant coffee crystals
  • 1 1/2 lb. cream cheese, softened
  • 1 c. sugar
  • 4 oz. semi-sweet chocolate, melted and cooled
  • 2 tbsp. flour
  • 1 tsp. vanilla
  • 3 eggs
  • Crust:
  • 1 l/2 c. oatmeal cookie crumbs (can substitute chocolate cookie)
  • 1/4 c. butter or margarine melted

Preparation

Step 1

Prepare crust by mixing crumbs and butter together, press into bottom of 9 inch spring-form pan. Set aside.

To make filling, stir together rum and coffees crystals, set aside. Beat cream cheese, sugar, melted chocolate, flour and vanilla. Add eggs all at once, beating until just combined. Do not over beat. Stir in rum mixture. Pour into crust and bake at 350 degrees for about 50 minutes until center appears to be set. Remove from oven and let cool for 10 minutes or until set. Loosen side of cheese cake from pan and remove rim. Let cheesecake stand at room temperature for 2 hours. Chill.
