Ingredients
- 2/3 pound bulk hot Italian sausages
- 2/3 cup chopped onions
- 2 cloves minced garlic
- 3 1/2 cups beef broth
- 2 1/2 cups water
- 1 1/2 cups chopped tomatoes
- 1 cup chopped green peppers
- 2/3 cup sliced fresh carrots
- 2/3 cup dry red wine
- 2/3 cup tomato sauce
- 1/4 cup tomato paste
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1 1/2 cups frozen cheese tortellini
- 1 cup slice zucchini
- 4 tablespoons fresh parsley

Preparation
Step 1
Cook sausage in large saucepan over medium heat. Remove from pan and place on paper towel. In the drippings, sauté onion and garlic until tender. Stir in broth, wine water, tomatoes, green pepper, carrot, tomato sauce and tomato paste, oregano and basil. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Skim fat. Stir in sausage, tortellini, zucchini and parsley. Cover and simmer 10 to 15 minutes longer or until tortellini is tender. (Can be made with Italian turkey sausage or sweet Italian sausage)
