Scallion Vinaigrette

This is a wonderful dressing is from Bobby Flay. It works well with grilled vegetables, nice spring greens.

Ingredients

  • 6 scallions, pale and dark green parts only, coarsely chopped
  • 1 jalapeno, seeded and finely chopped
  • 3 tbs sherry vinegar
  • 3 tbs water
  • 1 tsp honey
  • 1/4 c, plus 1 tbs canola oil
  • 3 tbs cilantro, chopped
  • salt and black pepper

Preparation

Step 1

In a blender, puree the scallions, jalapeno, vinegar, water and honey. Gradually add the oil. Add the cilantro and pulse. Season with salt and pepper and serve.
