Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 Tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1 stick (8 Tablespoons) butter, melted
  • 1 cup buttermilk
  • 1 large egg

Preparation

Step 1

1) Preheat oven to 400º. Butter a muffin tin or drop a cupcake paper into each of the openings.

2) Put all the dry ingredients into a mixing bowl and whisk to blend. Put all the wet ingredients into another bowl and whisk to blend. Pour the wet
ingredients over the dry and mix together, stirring only until wverything is moistened. (It's OK if there are a few lumps). Then spoon the batter into the muffin cups.

3) Bake 15-20 minutes, or until the muffins are golden and a knife inserted into the center comes out clean. Cool 5 minutes before unmolding.
