Berry Dumpling Cobbler

This is a nice recipe that has a combo of berries and very quick to make. A fun dessert for a small dinner party with a nice dessert wine!

Ingredients

  • 1 1/2 c blueberries
  • 1 1/2 c raspberries
  • 1 1/2 c strawberries
  • 1/2 c plus 2 tbs packed light brown sugar
  • 1/4 c plus 1 tbs water
  • 1/2 vanilla bean, split, scraped and pod reserved
  • salt
  • 1 tbs cornstarch
  • 1/2 c flour
  • 1/2 tsp baking soda
  • 1/8 tsp nutmeg
  • 2 tbs unsalted butter, cold and cut into diced pieces
  • 1/4 c buttermilk
  • whipped cream for topping, optional
  • cinnamon for garnish,optional

Step 1

Bring berries, 1/2 c sugar, 1/4 c water, vanilla seeds and pod, and a pinch of salt to simmer in a saucepan over medium heat. Cook, covered for 5 mins. Whisk together cornstarch and remaining tbs water; Add to berries and simmer for 1 min. Set aside.
Mix together remaining 2 tbs sugar, flour, baking soda, nutmeg and 1/8 tsp salt. Mix in butter until very small pieces are left. Stir in buttermilk until dough forms.
Return berry mixture t a gentle simmer over low heat, and add 6 mounds of dough. Cook dumplings covered, until cooked through, about 10 mins. Remove the pod and Serve warm. A little spritz of whipped cream with a cinnamon sprinkle is a very flavorful touch!
