- Date Filling:
- 3 cups pitted chopped dates (1-lbs)
- 1/4 c. sugar
- 1 1/2 c. water
- Crust and Topping:
- 1 c. packed brown sugar
- 1 c. butter softened (2 sticks)
- 1 3/4 c. all purpose flour
- 1 1/2 c. quick cooking oats
- 1/2 tsp. salt
- 1/2 tsp. baking soda
Make date filling.
Heat oven to 400 degrees. grease bottom and sides of 9 x 13 pan. shortening or cooking spray.
Mix brown sugar and butter in large bowl. stir in remaining ingredients until crumbly. Press half of mixture evenly into bottom of pan. Spread with filling. Top with remaining crumb mixture, press lightly.
Bake for 25-30 minutes until golden brown. cool on wire rack.
