Mediterranean Fresh Green and Yellow Beans
- 1 lb green beans
- 1/2 lb yellow beans
- 1 tbsp. olive oil
- 2 shallots diced
- 1 red pepper diced
- 1 clove garlic minced
- 1/2 tsp lemon rind
- 2 tbsp. lemon juice
- 1 tsp chopped fresh oregano
- 1 small clove garlic, minced
- 1 tsp Dijon mustard
- salt and pepper
- 1/2 c olive oil
- 1/2 c crumbled feta cheese
- 1/2 c pitted and slivered black olives
Whisk together lemon rind and juice, oregano, garlic and mustard; season with salt and pepper. Drizzle in the olive oil, whisking until combined. Reserve.
Heat oil in skillet on medium heat. Add shallots, red pepper and garlic and sauté 6 minutes or until softened slightly.
Meanwhile in a pot of boiling water, cook green and yellow beans for about 7 minutes or until tender crisp. Drain well and place in a large bowl.
Add shallot and pepper mixture to beans
Pour glaze over beans and toss to coat well
Add feta cheese and olives and toss again.
