Ingredients

    lb green beans

  • 1/2

    lb yellow beans

  • 1

    tbsp. olive oil

  • 2

    shallots diced

  • 1

    red pepper diced

  • 1

    clove garlic minced

  • 1/2

    tsp lemon rind

  • 2

    tbsp. lemon juice

  • 1

    tsp chopped fresh oregano

  • 1

    small clove garlic, minced

  • 1

    tsp Dijon mustard

  • salt and pepper

  • 1/2

    c olive oil

  • 1/2

    c crumbled feta cheese

  • 1/2

    c pitted and slivered black olives

Directions

Whisk together lemon rind and juice, oregano, garlic and mustard; season with salt and pepper. Drizzle in the olive oil, whisking until combined. Reserve. Heat oil in skillet on medium heat. Add shallots, red pepper and garlic and sauté 6 minutes or until softened slightly. Meanwhile in a pot of boiling water, cook green and yellow beans for about 7 minutes or until tender crisp. Drain well and place in a large bowl. Add shallot and pepper mixture to beans Pour glaze over beans and toss to coat well Add feta cheese and olives and toss again.
