Grapefruit & Quinoa Salad

Ingredients

  • Rio Star Grapefuit
  • 1/4 Cup Olive Oil
  • 8 thin slices of Ginger
  • 3 Tbsp fresh squeezed grapefruit juice
  • 2 Tbsp White Wine Vinegar
  • 2 Tsp Honey
  • Salt & Pepper
  • 1 1/2 cups Quinoa
  • 2 Carrots peeled & diced
  • 1 small Serrano or Jalepeno chile diced
  • 2 Tbsp fresh chopped Cilantro
  • 2 green onions, minced
  • Orange segmented

Preparation

Step 1

1. Peel Grapefruit and place peels, olive oil and ginger slices into a small saucepan over medium heat.

2. When oil starts to boil remove from heat. Let steep for 30 min.

3. Strain

4. Whisk together the grapefruit juice, vinegar, honey and salt & pepper.

5. Add Quinoa, Carrots, chile pepper, cilantro, onions, segmented orange and grapefruit.

6. Pour olive oil mixture over salad and stir.
