White Chicken Chili

Ingredients

  • 2 cans navy beans
  • 1 lg. onion, diced
  • 4 oz. butter
  • 1/4 c. flour
  • 3/4 c. chicken broth
  • 2 c. milk (and use fat free half & half)
  • 1 tsp. Tabasco
  • 1 1/2 tsp. chili powder
  • 1 tsp. cumin (or omit)
  • 1/2 tsp. salt
  • 1/2 tsp. white pepper (or use black)
  • 8 oz. mild green chilies (diced)
  • 5 boneless chicken breast (and boil them first and cut up)
  • 1 1/2 c. Monterey jack
  • sour cream

Preparation

Step 1

Cook chicken and onion. Melt butter, whisk in flour - cook 2 to 3 minutes - stir in onions - add chicken broth and milk - bring to a boil and simmer 5 minutes. Stir in Tabasco, chili powder, cumin, salt and pepper. Add beans, green chilies, chicken and cheese. Cook 20 minutes. Serve with sour cream.
