Classic Veggie Fried Rice

Ingredients

  • 1 c uncooked rice
  • 1 can chicken broth
  • 2 eggs lightly beaten
  • 2 T vegetable oil
  • 2 scallions (chopped)
  • 2 tsp. chopped garlic
  • 1/4 c shredded carrots
  • 2 T soy sauce

Preparation

Step 1

Cook rice according to directions, substituting chicken broth for water. In skillet over medium heat, cook eggs in 1 T oil until set. Remove from pan. In same skillet, cook scallions, garlic and carrots in remaining oil until carrots are tender. Add rice and soy sauce. Cook 1 minute. Stir in egg.
