Apple Sausage Stuffing

* run bread through food processor to make course crumbs. I also like to chop the celery and onions in the food processor. DO NOT PUT STUFFING INTO TURKEY UNTIL YOU ARE READY TO COOK IT!!!
Ingredients
- 2 pounds sweet italian sausages
- 2 cups chopped onions
- 2 cups chopped celery
- 2 large granny smith apples - peeled and diced
- 2 tsp poultry seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 10 cups or 2 loaves white bread cubed - crusts removed*
- 1 stick unsalted butter
- 4 eggs beaten
Preparation
Step 1
Remove sausage meat from casing. In large dutch oven or sauce pot over medium heat, cook sausage until brown, stirring frequently to beak up sausage. Drain and cool sausage (I usually run it quickly through a food processor break up the sausage further) Melt the butter in the pot add onions and celery, cook over medium heat until soft - about 10 minutes stirring occasionally. Add apples, cook 5 minutes longer - remove from heat. In a small bowl, mix eggs, poultry seasoning, salt and pepper. Into apple mixture, stir bread crumbs, egg mixture and sausage meat. Makes about 14 cups of stuffing for a 12 to 14 pound turkey.
You can make this the night before and refrigerate, covered until the next day - take it a a while before you want to stuff the turkey so is is not ice cold
