Brussels Sprout Salad

Ingredients

  • 2 -10 oz bags of shaved brussel sprouts
  • Olive oil, salt and pepper
  • 1 bag of arugula or spring mix greens
  • 1 apple, diced
  • 1 cup seedless grapes, diced
  • 1/2 cup crumbled feta
  • Vinaigrette
  • 1/2 c olive oil
  • 1/4 cup red wine vinegar
  • 1 T. dijon mustard
  • 1 shallot minced
  • salt & pepper

Preparation

Step 1

Preheat oven to 400. Toss brussel sprouts with olive oil, salt and pepper and roast til browned, about 20-30 minutes.

Let cool and toss with other salad ingredients. Add vinaigrette before serving.
