Ingredients
- 2 -10 oz bags of shaved brussel sprouts
- Olive oil, salt and pepper
- 1 bag of arugula or spring mix greens
- 1 apple, diced
- 1 cup seedless grapes, diced
- 1/2 cup crumbled feta
- Vinaigrette
- 1/2 c olive oil
- 1/4 cup red wine vinegar
- 1 T. dijon mustard
- 1 shallot minced
- salt & pepper
Preparation
Step 1
Preheat oven to 400. Toss brussel sprouts with olive oil, salt and pepper and roast til browned, about 20-30 minutes.
Let cool and toss with other salad ingredients. Add vinaigrette before serving.
