Ingredients

  • 1 lb ground beef
  • 1 cup died onion
  • 1 cup julienned carrots
  • 3 stalks celery (chopped)
  • 2 garlic cloves (minced)
  • 2 (14 1/2 oz) cans diced tomatoes
  • 1 (15 oz) can red kidney beans with liquid
  • 1 (15 oz) can great northern beans with liquid
  • 1 (15 oz) can tomatoe sauce
  • 1 (12oz) can V-8 juice
  • 1 teas vinegar
  • 1 teas salt
  • 1 teas oregano
  • 1 teas basil
  • 1/2 teas pepper
  • 1/2 teas thyme
  • 1/2 lb Ditali pasta

Preparation

Step 1

Brown beef in lagre stock pot drain off fat. Add onion, carrot, celery and garlic. Saute for 10 min. Add remaining ingredients, expect pasta and simmer for 1 hour. After 50 min. cook pasta to al dente. Drain well and add to pot of soup. Simmer for 10 min. more.
Serve with salad and hot Italian bread or bread sticks and grated parmesan cheese.
