Super Simple Southwest Chicken and Rice Bake

Easy recipe, great way to use leftover chicken and leftover rice.

Ingredients

  • 3 chicken breasts, cooked, cubed or shredded; or just use leftover chicken
  • 3/4 cup of beer
  • 1 cup of water
  • 2 cups precooked brown or white rice
  • 1 small onion, diced
  • 1 cup thick salsa
  • 1 package enchilada or taco seasoning (or substitute garlic powder, chili powder, salt and cumin to taste)
  • 1 can black beans, drained
  • 1 cup shredded cheddar cheese

Preparation

Step 1

Mix all ingredients together. Place in greased baking dish (I spray mine with olive oil) and sprinkle with cheese. Bake at 350 degrees until cheese is bubbly and everything is heated through; about 45 minutes.
Serve with tortillas and more salsa.
