Ingredients
- 12 strips of bacon
- 2/3 cup butter
- 2/3 cup flour
- 7 cups milk
- 4 large baked potatoes, cooled, peeled & cubed
- (*option substitute 1-2 potatoes with cauliflower)
- 4 green onions, chopped
- 1 1/4 cup cheddar cheese
- 1 cup sour cream
- 1 tsp salt
- 1 tsp pepper

Step 1
Melt butter. Whisk in flour until smooth. Gradually add milk, whisking constantly until thick.
* If using cauliflower, steam vegetable until tender. Set aside until cool.
Add potatoes (cauliflower) & onions. Bring to a boil. Stir frequently.
Simmer 10 min. Stir in bacon, cheddar cheese, sour cream.
Serve with crumbled bacon.
