Ingredients

  • ½

    head shredded lettuce

  • 2

    stalks celery, chopped fine

  • 1

    bunch green onions, chopped fine

  • ½

    green pepper, chopped fine

  • 1

    10-oz frozen peas

  • 2

    finely grated carrots

  • 4

    eggs, sliced

  • 2

    cups mayonnaise

  • 2

    Tbs. sugar

  • 3-6

    slices bacon, crisp and crumbled

  • Sliced tomatoes

  • cups grated cheese

Directions

Mix lettuce, celery, green onions, and green pepper and spread as one layer. (I also throw in some fresh spinach if I have it on hand). Cook, cool and drain peas. Layer peas, carrots and then sliced eggs. Mix mayo and sugar. Spread over top. Top with sliced tomatoes. Then sprinkle with grated cheese and bacon over all. Cover and refrigerate for 8 hours.
